Kendahl Roufa Week 4: Food Waste Management at School of Mines, Concluding my research and presenting my final findings to Mikaela and Amy

Hello Friends and welcome to my final blog post. I spent my last week working outside at the Mines campus, pulling together a presentation. The presentation covered what my goals for the internship were, what I accomplished, and considering what someone who would be picking up the job might start on. I also finished up my Literature review, which was a hefty final paper totaling ten pages. Mikaela and I were unable to go into the fields this week. Mikaela was busy submitting a paper of hers to scientific journals, and I was busy finishing up my paper and creating the presentation.

I spent all day Monday working on the presentation. I talked with Amy, who is Mikaela’s advisor, about what she wanted to be covered in the presentation that I would be giving to her and Mik that Thursday. Then I got to work sorting out all my notes looking for the most important facts from my findings.

Tuesday and Wednesday were spent at the same picnic table outside working on the final drafts of my literature review. The main idea of my paper was to discuss the problem of food insecurity around colleges and universities around the world. The essay also covered how properly managing food waste and food surplus can help solve the problem of food insecurity. I wrote about other topics such as different ways people are trying to prevent food insecurity and the environmental implications of poorly managing food waste. Once I had finished my paper late Wednesday afternoon, I was relieved because I had officially completed my to-do list.

Thursday morning was crazy. I was supposed to give my final presentation at 11 am, but Amy had to move it up to 9 am because one of her dental implants had fallen out. Eventually, she changed the meeting time again to 12 because her dentist was able to sneak her in early in the morning. We had lunch at Woody’s Pizza in Golden, Co, and I gave my final presentation to the two girls. After my presentation, we sat and talked about college and Ph.D. programs because I had a lot of questions for them. I was able to learn so much, and I am forever grateful.

Friday was my official last day as an intern. I uploaded all of my notes and files to the team folder and said my goodbyes. It was pretty sad because I enjoyed working with Mikaela. She was very patient with me and was always willing to work with me. She kept me challenged and never seemed to underestimate me.

The weekend was a blast. I went and took photos at the top of Lookout Mountain with Leah and Liv. I had a fantastic time because I got to spend time with Leah, who I rarely get to see. I also went riding at the Apex trailhead in Golden with Jackson and Miles. We spent the entire time racing the rain. In an attempt to get to the top as fast as we could, we took the most direct route up, which ultimately ended up with us taking our bikes for a walk up the hill. After that mellow treck, the downhill section was fantastic aside from the one time I fell because I got sidetracked by a bird and hit a tree.
